A new season brings evolution at Hotel Crillon Le Brave
Kimberley Cohen and Leslie Kouhana are the sister duo behind Maisons Pariente. Here they discuss the opening of La Maison Tilleul, the new restaurant at Hotel Crillon Le Brave.
Crillon le Brave continues to evolve while preserving the soul of the village. How did you approach this new chapter, with the addition of the restored historic buildings and new guest experiences, while remaining true to the property’s original spirit?
“This evolution was a very measured decision. Crillon le Brave is such a unique place, with a soul that comes from its integration within the village and the surrounding Provençal landscape, so we approached every step with great care. We had wanted to extend the experience for some time, with the addition of ten new rooms and a transformation of the spa into a more complete wellbeing destination, but this was years in the making before any work began.
“A great deal of planning went into ensuring that every addition would feel respectful of the site and its natural setting. The new pool, in particular, was something we approached with caution, as we were very conscious of preserving the authenticity of the property. In the end, it feels like a true success because it looks as though it has always belonged there. That was exactly the ambition: to evolve Crillon le Brave in a way that feels entirely natural.”
The kitchen felt like the most natural place for creating memories. Learning local recipes, discovering the terroir, sharing time around food with loved ones, these are the kinds of moments that stay with you.

La Maison Tilleul introduces a new dimension centred around culinary ateliers and retreats. What inspired you to create a space dedicated to slower, more immersive experiences in Provence?
“At Maisons Pariente, hospitality is ultimately about creating memories. We wanted to imagine experiences that would allow guests to form a genuine emotional connection, both with the destination and with the people they are travelling with.
“The kitchen felt like the most natural place for that. Learning local recipes, discovering the terroir, sharing time around food with loved ones, these are the kinds of moments that stay with you.
“La Maison Tilleul was born from this idea of creating meaningful, immersive experiences that allow memories to be woven between the place and our guests.”
